  • Emeril's Cheesy Chicken Shortcake

    Ingredients

    • 2 Tbsp. Butter
    • 1 lb Chicken breast, skinless, boneless and small diced ESSENCE
    • 1 c. Chopped onions
    • 1 lb Smoked sausage, cut into 1/4-inch slices Salt Freshly grnd black pepper
    • 1 Tbsp. Minced garlic
    • 2 c. Heavy cream
    • 1 dsh Worcestershire Sauce
    • 1 dsh Crystal Warm Sauce
    • 1/4 c. Minced green onions
    • 8 x Cheesy Biscuits, see recipe
    • 1/2 c. Grated Parmesan Reggiano cheese

    Directions

    1. In a large saute/fry pan, heat one Tbsp. of the butter. Season the chicken with Essence. Add in the chicken to the melted butter and quickly saute/fry for 2 min. Add in the remaining butter and heat. Add in the onions. Season with salt and pepper. Saute/fry the onions for 2 min. Add in the sausage and continue to saute/fry for 2 min. Add in the garlic and cream. Season the mix with salt, pepper, Worcestershire Sauce and warm sauce. Bring the liquid to a boil and reduce to a simmer. Simmer the mix for 4 to 6 min, stirring occasionally. Add in the green onions. To serve, slice the biscuits in half and spoon the chicken mix over the top. Garnish with parsley and cheese.
