  • Eggplant & Mushroom in Cheesy Tomato Sauce

    This doesnt have any meat / poultry but you can always opt to add whatever you desire ; i've tried adding plain boiled chicken strips once with this & it tasted just fine. Can be matched with slices of any type of plain bread or rice.

    Ingredients

    • Preffered Cooking oil enough to drizzle on a deep pan
    • Garlic 1-3 TBSP, minced
    • Eggplant 3-4 medium sized, cut to whichever shape you like
    • Button Mushroom 1-1 1/2 cup, buy the sliced ones in can
    • Peppercorn or Ground Black Pepper, season to taste
    • Tomato Sauce 3-5 cups, depends if you want saucy or thicker blend so it's up to you
    • Cheddar Cheese i'd say about 1/2 to 1 cup, grated

    Directions

    1. Make sure cooking area & utensils are clean & ready to use.
    2. Drain mushrooms first, grate cheese, mince the garlic & slice the eggplants LAST.
    3. Prepare pan on LOW heat, drizzle cooking oil, throw in garlic for about a minute or two then REMOVE put aside first.
    4. Next throw in the eggplants after 2-3 minutes toss in the mushrooms then pour in the Tomato Sauce stir for 2-3 minutes.
    5. Stir in the peppercorn or ground black pepper & toss the garlic which was placed aside earlier then lastly sprinke the cheddar cheese.
