  • Egg Noodle And Spinach Casserole

    Ingredients

    • 1 pkt (14 oz) of egg noodles, cooked and liquid removed
    • 8 Tbsp. (1 stick) butter
    • 1 c. Swiss cheese, grated
    • 1 tsp Salt
    • 1 c. Finely minced onions
    • 3 lb Fresh spinach, washed and minced
    • 1/2 c. Dry bread crumbs
    • 4 x Hard boiled Large eggs, quartered for garnish

    Directions

    1. Polish/Ukrainian
    2. Preheat oven to 350 degrees F.
    3. In a large bowl toss the cooked noodles with 2 Tbsp. butter, 6 Tbsp. of cheese and salt to taste.
    4. In a skillet, heat 3 Tbsp. butter and saute/fry the onions till soft.
    5. Stir in the minced spinach and cook uncovered for a few min.
    6. Generously butter a lasagna dish. Place one-third of the noodles on the bottom and top with half the spinach. Repeat layering ending with the noodles on top.
    7. Heat remaining butter in a small pan. Sprinkle the bread crumbs and remaining cheese over the noodles, then pour on the butter. Bake in the oven for 30 min or possibly till the top is golden brown. Garnish with the hard boiled Large eggs.
    8. Serves 6
