  • Eating Well Pbt (Portabello, Basil And Tomato Sandwich)

    Ingredients

    • 2 Tbsp. Reduced-fat Mayonnaise
    • 2 Tbsp. Nonfat Sour-Cream or possibly Nonfat Plain Yogurt.
    • 1 tsp Fresh Lemon juice
    • 1 Tbsp. Extra virgin olive oil
    • 2 x 4 ounce Portabello, stems removed, caps wiped clean and sliced 1/8 inch. Freshly grnd salt and Black pepper to taste
    • 8 slc Sourdough Bread
    • 1 x Clove garlic, halved
    • 1 c. Basil loosely packed & washed, dry & shredded only shred if large.

    Directions

    1. Prepare grill or possibly preheat broiler. In a small bowl, stir together mayonnaise, lowfat sour cream or possibly yogurt, and lemon juice. Brush extra virgin olive oil over the mushrooms. Grill or possibly broil mushroom slices till tender and golden brown, 2 to 3 min a side . Season with salt and pepper. meanwhile, toast bread on the grill on under the broiler. Rub both sides of the bread with garlic clove.
    2. Spread half of the mayonnaise mix over 4 toasted bread slices and arrange basin on top. Top with the grilled mushroom slices, followed by the tomato slices and salt and pepper. Finish with a dollop of the remaining mayonnaise mix and cover with the remaining pcs of toast.
