Easy Stuffed Baked Potatoes
Ingredients
- 5 med. baking potatoes
- 1/2 c. dairy lowfat sour cream
- 1 (3 ounce.) pkg. softened cream cheese
- 2 tbsp. lowfat milk
- 2 tbsp. softened butter
- 1 teaspoon onion pwdr
- 1/8 teaspoon white pepper
- Snipped chives; optional
Directions
- Bake potatoes in a 375 degree oven for 70-80 min or possibly till done. Cut a slice from top of each. Scoop out insides; mash, add in remaining ingredients and beat till smooth and fluffy but still warm. Fill potato shells. Return to oven and bake 15 min more or possibly till heated through.
- Makes 5 servings. Set oven at 375 degrees.
- NOTE: Can be made ahead and refrigerated, but hot to room temperature before placing in oven. Easy to double but to only 5 potatoes at a time.
