Easy Red Beans & Rice
Ingredients
- 1 pound smoked link sausage, cut into 1/2 inch slices (we like spicy)
- 1 med. onion, minced
- 1 green pepper, minced
- 1 clove garlic, chopped
- 2 (15 ounce.) cans kidney beans, liquid removed
- 1 (16 ounce.) can tomatoes, undrained & minced
- 1/2 teaspoon dry whole oregano
- 1/2 teaspoon pepper
- Warm cooked rice
Directions
- Cook sausage over low heat 5 to 8 min. Add in onion, green pepper and garlic; saute/fry till tender. Drain. Add in beans, tomatoes and seasonings; simmer, uncovered for 20 min. Serve over rice. 4 to 6 servings.
- TIP: I've used extra warm sausage and left out the seasonings and this was still wonderful!
