  • Easy Buttermilk Pancakes

    Ingredients

    • 2 sm. or possibly 1 lg. egg
    • 2 T shortening or possibly oil
    • 2 T lemon juice
    • 1 1/4 c. lowfat milk or possibly buttermilk
    • 1 teaspoon sugar
    • 1 teaspoon baking pwdr
    • 1/2 teaspoon baking soda
    • 1/2 teaspoon salt
    • 1 1/4 c. flour

    Directions

    1. Put together lemon juice and lowfat milk; set aside to thicken. If using buttermilk omit the lemon juice. In bowl you can pour from, cream large eggs, oil and sugar. Measure flour in bowl all across the top of the egg mix. Then sprinkle baking pwdr, soda and salt around on top of the flour, breaking any lumps. Pour lowfat milk mix in and stir till dry ingredients are mixed in, but don't beat. Leave it lumpy.Let batter set for 15 min. Don't stir again. Pour onto hot griddle lightly oiled. When bubbles appear on top of pancakes, turn over. Serve with any sweet topping or possibly fruit and whipped cream.
