Easy Black Bean Soup
Use canned black beans for this easy prep soup. Ingredients
- 1 1/2 tbs. smoked cumin
- 3 tbs. olive oil
- 1 large onion, chopped
- 2 large carrots, chopped
- 2 ribs celery, chopped
- 4 cloves garlic, chopped
- 3 cans black beans, undrained
- 2 bay leaves
- 1 smoked ham hock
- 2-3 cups chicken stock
- salt and pepper to taste
- Tabasco to taste
- Garnish:
- 2 tbs. fresh lime juice
- sour cream
- cilantro
Directions
- Smoke the cumin until fragrant.
- Saute veggies and garlic until golden brown.
- Add all ingredients in a soup pot, add 2 cups of the broth.
- Simmer 30 minutes.
- Remove ham hock and bay leaf.
- Let cool, place in food processor in batches. Puree.
- Use more broth to attain desired consistency.
- Reheat.
- Stir in lime juice.
- Top with dollops of sour cream and chopped cilantro.
