East Meets West Frittata
We love to combine Italian and asian vegetables. This Frittata is great for brunch or breakfast. Add brown, baby portabella or shitake mushrooms or thinly sliced potatoes for a different texture. Please note that this dish serves 10-12 as an appetizer and 4 as a main dish. Ingredients
- 1 baby bock Choi, rinsed and cut into 1” pieces
- 1 bunch Swiss chard, rinsed and cut into 1” pieces
- ½ onion, thinly sliced
- 1 can quartered artichoke hearts, water packed
- 1 tsp. garlic, thinly sliced
- 2 Tbls virgin olive oil
- Salt, pepper, crushed chili to taste
- 4-6 eggs
Directions
- Sauté Baby Bock Choi in olive oil with garlic, then sauté Swiss chard.
- Combine all ingredients.
- Spray with non stick spray, a 10â cast iron frying pan, or 1:â deep dish that is 10â in diameter.
- Place ingredients into pan, then add eggs that have been whipped.
- Bake at 350 degrees for 30-35 minutes until firm to the touch in the center.
- Let set for 15 minutes and flip onto a plate, twice, so the original side is up.
