Dry Fried Shrimp With Ginger
Ingredients
- 4 Tbsp. Peanut oil
- 2 lb Cleaned, unshelled shrimp
- 2 Tbsp. Chopped garlic
- 1 tsp Chopped fresh ginger root
- 4 Tbsp. Coarsely minced scallions
- 2 Tbsp. Chinese rice wine =Or possibly=- Dry sherry
- 2 Tbsp. Light soy sauce
- 1/2 tsp Dark soy sauce
- 1 pch Salt
- 1/4 c. Chicken broth
Directions
- HEAT A WOK over a high flame. Add in the oil, and when it is warm, stir-fry the shrimp quickly till they turn pink. Add in the remaining ingredients.
- Continue stirring till the shrimp are cooked (about 3 min).
