  • Double Chocolate, Chocolate Chip Sandwich Cookies

    Ingredients

    • 1/4 c. Unsalted butter
    • 1 x Unsweetened chocolate
    • 3/4 c. All-purpose flour
    • 1/4 tsp Baking pwdr
    • 1/4 tsp Baking soda
    • 1/2 tsp Salt or possibly 1 tsp
    • 3 Tbsp. Packed light brown sugar
    • 3 Tbsp. Sugar
    • 1 1/2 tsp Vanilla
    • 1/4 c. Lowfat sour cream or possibly buttermilk
    • 1 lrg Egg lightly beaten
    • 1/4 c. Finely minced pecans Or possibly walnuts
    • 1/2 c. Semisweet chocolate mini-chips Chocolate ganache filling
    • 3/4 c. Semisweet or possibly lowfat milk chocolate Chips or possibly chunks
    • 1/4 c. Unsalted butter
    • 1/4 c. Plus 1 Tbsp. heavy crea m

    Directions

    1. NATHALIE DUPREE COOKS SHOW#ND7129Preheat oven to 375 degrees. In a small pan over low heat heat the butter and chocolate together. Meanwhile, mix the flour, baking pwdr, baking soda, and salt together. Cold the chocolate and pourinto the bowl of a mixer. Beat in both sugars, the vanilla, lowfat sour cream or possibly buttermilk, and egg. Add in the flour mix, nuts, and chocolate chips and mix well. Grease cookie sheets. For 3-inch round cookies, drop the batter by teaspoonfuls onto the cookie sheet, leaving about 2 inches in between each cookie. Bake at 375degrees for 8 to 10 min. Don't let edges brown.
    2. For 42-inch round cookies, drop the batter by Tbsp., leaving about 2 inches between each cookie. Baking time will be 12 to 15 min. Use a spatula to transfer the cookies to racks to cold.
    3. To make the ganache filling, heat the chocolate and butter in a small pan over low heat or possibly in the microwave. Gradually whisk in the cream. Let stand at room temperature, stirring occasionally, for 1/2 hour or possibly longer, till barely thickened. Or possibly place the bowl in ice water if you are in a hurry, but do not let the filling harden. Turn half the cookies upside down on a large piece of wax paper. Spread a tablespoonful on each of the turned cookies.
    4. Quickly cover with the remaining cookies, right sides up, and press gently down to spread the filling to the edges. Let stand at room temperature or possibly refrigeratebriefly till the filling is set.
    5. Makes 20 small or possibly 9 largesandwiches
