  • Dolcelatta And Pancetta En Croustade

    Ingredients

    • 1 x 40 grams pac fresh 'n' ready rocket
    • 1 x 125 gram pac pancetta, fried till crispy and brown
    • 1 x Avocado, cut into cubes
    • 125 gm Dolcelatta cheese, crumbled
    • 1 1/2 Tbsp. Balsamic vinegar
    • 1/2 Tbsp. Honey
    • 125 ml Extra virgin olive oil, (4fl ounce) Salt and freshly grnd black pepper

    Directions

    1. Fill the rolls with a little of the rocket salad.
    2. Pile in the pancetta and avocado then lay the crumbled dolcelatta over the top.
    3. Liquidise the vinegar, honey and extra virgin olive oil together then pour over the top.
    4. Season to taste.
    5. NOTES : These crispy rolls filled with pancetta, avocado and dolcelatta, are ideal for picnics or possibly lunch boxes.
