Dolcelatta And Pancetta En Croustade
Ingredients
- 1 x 40 grams pac fresh 'n' ready rocket
- 1 x 125 gram pac pancetta, fried till crispy and brown
- 1 x Avocado, cut into cubes
- 125 gm Dolcelatta cheese, crumbled
- 1 1/2 Tbsp. Balsamic vinegar
- 1/2 Tbsp. Honey
- 125 ml Extra virgin olive oil, (4fl ounce) Salt and freshly grnd black pepper
Directions
- Fill the rolls with a little of the rocket salad.
- Pile in the pancetta and avocado then lay the crumbled dolcelatta over the top.
- Liquidise the vinegar, honey and extra virgin olive oil together then pour over the top.
- Season to taste.
- NOTES : These crispy rolls filled with pancetta, avocado and dolcelatta, are ideal for picnics or possibly lunch boxes.
