  • Dirty Rice Risotto

    Ingredients

    • Duck or possibly chicken necks and wings* Gizzards and heart, chop Extra virgin olive oil
    • 1/2 x Onion, chop
    • 1 x Rib celery, slice
    • 1 x Red pepper, chop
    • 1 Tbsp. Garlic, mince
    • 1 c. Popcorn rice
    • 2 c. Stock, or possibly as much as needed Salt and pepper
    • 1 bn Green onions, chop

    Directions

    1. *If duck is unavailable, substitute chicken. Saute/fry the neck and wings of duck in a pan in oil. Add in gizzards and heart. Saute/fry with onion, celery, pepper, garlic and rice; stirring constantly. Saute/fry rice for 20 seconds, add in 1 c. stock and stir constantly till absorbed. Add in 1 more c. stock and stir till absorbed. Keep adding stock, if needed till rice is cooked.
    2. Season with salt and pepper. Finish with green onions.
