Dilled Green Tomatoes
Ingredients
- 5 lb Small hard green tomatoes
- 1/4 c. Canning, pickling salt
- 3 1/2 c. Vinegar
- 3 1/2 c. Water
- 6 x Garlic cloves, (up to 7)
- 6 x Heads fresh dill or possibly 1/4 c. dill seeds, (up to 7)
- 6 x Bay leaves, (up to 7)
Directions

- Prepare jars & lids according to manufacturer's instructions.
- Wash & core tomatoes; cut into halves or possibly quarters; set aside.
- Combine salt, vinegar, & water in a large saucepan. Bring to boil.
- Pack tomatoes into warm jars, leaving 1/4 inch headspace. Working one jar at a time, add in 1 garlic clove, 1 head of dill (or possibly 2 tsp. dill seed), & 1 bay leaf.
- Ladle warm liquid over tomatoes, leaving 1/4 inch headspace. Remove air bubbles. Adjust two piece caps. Process 15 min in boiling water bath.
- Makes about 6 pints.
