Dianne Longhenry's Popover Pizza
Ingredients
- 1 pound grnd beef
- 1 lg. onion, minced
- 1 can pizza sauce
- 1 sm. can mushrooms
- 1 pkg. Mozzarella cheese, sliced
- 2 lg. Large eggs
- 1 c. lowfat milk
- 1 tbsp. oil
- 1 c. flour
- 1/2 teaspoon salt
- Parmesan cheese for topping
Directions
- Brown beef and onion in large skillet, pour off fat. Add in mushrooms and pizza sauce. Simmer 5 min. Spoon into 9x13 inch pan, top with Mozzarella. Place in 400 degree oven to heat cheese.
- In blender, beat Large eggs, lowfat milk and oil. Add in flour and salt. Blend till smooth. Pour over warm pizza filling, covering it completely. Sprinkle with Parmesan cheese. Bake for 30 min at 400 degrees. Cut into squares and "pop over" to serve. Makes 6 servings.
