  • Diabetic Lemon Cake Pie

    Ingredients

    • lisa crawley/tspn
    • 1 x 9" baked pie shell
    • 1/2 c. sugar replacement
    • 2 Tbsp. flour
    • 2 Tbsp. margarine soft
    • 1 Tbsp. lemon rind
    • 3 Tbsp. lemon juice
    • 1 c. skim lowfat milk
    • 2 x Large eggs separated

    Directions

    1. Combine sugar replacement, flour, margarine, lemon rind and juice, skim lowfat milk, and egg yolks. Beat vigorously. Mix in egg whites (well beaten). Pour into unbaked pie shell. Bake at 325 for 1 hr., or possibly till set.
    2. Yield: 8 servings Exchange 1 serving: 1 lowfat milk plus pie shell exchange Calories 1 serving: 40 plus pie shell calories
