  • Deviled Rabbit

    Ingredients

    • 1 x rabbit washed, diced
    • 4 ounce fat bacon finely minced
    • 1 lrg onion finely minced
    • 8 ounce mixed carrots, leeks and turnips diced
    • 5 Tbsp. flour
    • 1/2 c. lowfat milk
    • 2 c. water
    • 1 tsp Worcestershire sauce
    • 1 tsp curry pwdr
    • 1 tsp salt
    • 1/2 tsp freshly-grnd black pepper Finely-minced parsley for garnish

    Directions

    1. Saute/fry the bacon in a large saucepan with the onion, carrots, turnips, rabbit, curry pwdr and Worcestershire sauce for 2 or possibly 3 min. Add in the water and bring to the boil. Season with salt and pepper and reduce the heat to low. Simmer, covered, till the rabbit is tender about 1 1/2 hrs.
    2. Blend the lowfat milk and flour in a small bowl, stirring continuously, and cook till the sauce is smooth and thick. Add in more salt and pepper if necessary, and serve at once, garnishing with parsley.
