Delicious Pumpkin Dip
Ingredients
- 1/2 c. dry Moo (Not!) Soy Lowfat milk
- 1 c. cool water
- 8 ounce canned pumpkin puree
- 1/2 c. corn crystalline fructose (or possibly 1 1/4 Tbsp. SugarNot)
- 1 tsp cinnamon
- 1/4 tsp nutmeg

- Combine Moo (Not!) and water in medium-sized bowl. Whisk till mixed. Add in remaining ingredients and whisk till blended (1-2 min). Chill. Outstanding served with Stacy's Cinnamon and Sugar Pita Chips (also available from DDC).
- Serves 8.
- NOTES :You can probably use any dry soy lowfat milk pwdr fold in this, such as Better Than Lowfat milk, if you do not want to use the Moo (Not!).
- Silken tofu would probably work, too.
