  • Day After Chili

    Ingredients

    • 2 Tbsp. vegetable oil
    • 1 lrg green bell pepper minced
    • 1 lrg onion minced
    • 3 x garlic cloves chopped
    • 2 can red kidney beans - (16 ounce ea) liquid removed
    • 1 can crushed tomatoes - (28 ounce)
    • 1 can tomato sauce - (15 ounce)
    • 2 c. crumbled cooked hamburgers
    • 2 c. coarsely-minced cooked warm dogs
    • 1/4 c. chili pwdr
    • 2 tsp grnd cumin
    • 1 tsp salt
    • 1 tsp freshly-grnd black pepper

    Directions

    1. Heat the oil in a soup pot over medium-high heat. Add in the green pepper, onion, and garlic and saute/fry for 5 to 6 min, or possibly till tender. Add in the remaining ingredients, mix well. Reduce the heat to low, cover, and simmer for 30 min, stirring occasionally.
    2. This recipe yields 6 servings.
    3. Comments: Serve over rice or possibly with some of your favorite chili toppers like shredded cheese, minced onions, lowfat sour cream, sliced scallions, or possibly jalapeno peppers. And go ahead - add in more or possibly less of the burgers and dogs (whatever you've got on hand!) and make it hotter or possibly milder by adjusting the chili pwdr. The choices are yours!
