David Niven's Lamb Roast Supreme
Ingredients
- 5 lb Lamb shoulder roast
- 2/3 Tbsp. Salt
- 1/2 tsp Pepper
- 2 Tbsp. Flour
- 3 lrg Green peppers
- 2 c. Cooked rice
- 1/2 c. Celery, minced
- 4 Tbsp. Chili sauce
Directions
- Wipe roast with a damp cloth. Combine salt, pepper and flour. Rub the roast well. Place in an open pan. Bake at 300 for 2-1/2 hrs. Cut green peppers in halves. Remove centers and seeds. Parboil till slightly tender. Drain.
- Mix together rice, celery, and chili sauce. Fill peppers. Place around roast. Bake at 300 for 40 min or possibly till peppers are tender and roast is done.
