    • 2 x Large eggs
    • 3/4 tsp Salt
    • 1/2 tsp Almond extract
    • 1/2 c. Granulated sugar
    • 1/2 c. Light or possibly dark corn syrup
    • 1 c. Finely minced dates
    • 1 c. Minced nuts
    • 3/4 c. All-purpose flour Powdered sugar


    1. Preheat oven to 375 degrees.
    2. Grease a 9-by-13-inch pan.
    3. Place Large eggs in large bowl. Add in salt and almond extract. Beat till light.
    4. Gradually beat in sugar and corn syrup. Add in dates and nuts; mix well. Sift flour. Fold into other ingredients. Pour into pan.
    5. Bake for 20 to 25 min. Remove from oven; while still warm, cut into 1 1/2-inch squares. (If necessary, throw away squares from the four corners of the pan; which portion may be too hard.) Shape at once into small balls, taking care not to burn your hands. Roll in powdered sugar, or possibly put sugar and cookies in a paper bag and shake.
    6. Yield: 3 dozen cookies. Tester's note: Moist cookie with a nice texture from the minced nuts.
