    Dark Cherry Walnut Rum Cookie

    My mother's day cake is one crazy cake,a product of my trial and error in the kitchen.It makes me drowsy and sleepy.As you go on and read the recipe,you will know why.I cherish and I love this cake,it reflects me and my weird taste and at home no one enjoyed it.Life as a mother is tedious,wacky,compelling,peaceful,serene,emotional,verbal,sometimes mean yet empowering and this is what the cake is all about.I am proud of my dark,moist and out of this world cake!

    Ingredients

    • 2 cups all purpose flour
    • 3/4 cup cocoa powder
    • 1 package chocolate pudding ( 3.25 oz)
    • 2 cups white sugar
    • 1 1/2 tsp baking powder
    • 1 1/2 tsp baking soda
    • 1 tsp salt
    • 4 eggs
    • 1/2 cup canola oil
    • 2 tsp vanilla
    • 1/2 cup cold water
    • 1/2 cup brandy or dark rum
    • 1/2 cup chopped walnut
    • 1/2 cup chopped glazed cherries
    • For the glaze:
    • 1½ stick butter
    • ¼ cups water
    • 1½ cup sugar
    • ¾cup brandy/rum

    Directions

    1. Combine and sift flour,cocoa,sugar,baking powder,baking soda and salt
    2. After sifting,proceed to combine the sifted ingredients and chocolate pudding
    3. Combine walnut and cherries
    4. Grease and flour a bundt cake pan.
    5. Sprinkle chopped cherrywalnut over bottom of pan.
    6. In a mixer,mix all cake ingredients together.
    7. Pour batter into pan over next to cherrywalnut.
    8. Bake at 350 or 160 for 1 hour.Do not over bake!
    9. Glaze:
    10. While cake has ten minutes to go,make the glaze.
    11. Melt butter in saucepan.Stir in water and sugar.
    12. Boil for 4 to 5 minutes,stirring constantly.
    13. Turn off flame and pour in brandy or rum.
    14. Stir to combine and reheat for 30 seconds.
    15. Remove cake from oven.
    16. Immediately drizzle 1/3 of the glaze on the bottom (top) of the cake.
    17. Allow to sit for five minutes.Invert the cake onto a serving plate.
    18. Prick surface a hundred times with a fork(gently)
    19. Slowly drizzle remaining rum glaze all over the top of the cake,let it drip down the sides.
    20. Cool to room temperature before serving to ensure glaze has soaked in.
    21. Eat and enjoy cause its mother's day!
    22. Note:you can use ready made cake mix but I opted to use my old time recipe for dark chocolate cake which has been with me since 2000.I formulated it then and called it Dark Chocolate Steamed Cake.
