Dairy Free Fettuccine Alfredo
Ingredients
- 1 1/2 Tbsp. Extra virgin olive oil
- 2 x Garlic cloves, chopped
- 3/4 c. Plain soy lowfat milk
- 2 tsp All-purpose flour
- 3 Tbsp. Nutritional yeast
- 1 pch Nutmeg
- 3 c. Fettuccine noodles, cooked
Directions
- Heat oil over medium heat in a large skillet & lightly saute/fry the garlic till it is fragrant. Stir in the flour & continue to stir for 1 minute.
- Slowly pour in the lowfat milk & continue to stir till the sauce is smooth.
- Continue to stir till the sauce begins to thicken. Turn of the heat & stir in the nutritional yeast. Sprinkle with nutmeg & serve over cooked noodles.
- Serve immediately.
