  • Curried Liver And Onions

    Ingredients

    • 1 pound calf's liver, sliced 1/2" thick
    • 4 slices bacon, cut in 1" pcs
    • 2 1/2 c. onions, sliced in rings
    • 3 tbsp. salad oil
    • 1/4 c. flour
    • 1 - 1 1/2 teaspoon curry pwdr
    • 3/4 - 1 teaspoon salt
    • 3 tbsp. vinegar
    • Minced parsley (opt.)

    Directions

    1. 1 to 1 1/2 tsp. lemon pepper can be substituted for curry.
    2. Cut liver into strips, about 3/4" wide. Set aside.
    3. Brown bacon pcs in a large skillet till crisp. Remove with slotted spoon. Set aside. Keep hot.
    4. Lightly brown onions in drippings. Spoon onto hot serving plate. Add in oil to same pan and heat.
    5. Meanwhile, combine flour, curry and salt in a plastic or possibly paper bag. Shake liver in flour mix. Over medium high heat quickly saute/fry strips in oil, turning to brown on all sides, cooking 3 or possibly 4 min. Liver should be pink inside. Remove from heat. Immediately pour in vinegar. Cover and let stand 1 minute. Spoon liver onions. Sprinkle with bacon and parsley, if used. Serve immediately. Also good served over cooked noodles.
