Curried Chicken Crunchies
An adaptable recipe to be used either as an appetizer or served on a wrap. Spices can be increased for heat. Ingredients
- 2 boneless, skinless chicken breast cut into 1/2 inch cubes
- 2 - 3 tsp olive oil
- 3/4 tsp madras curry powder
- 1/2 tsp tumeric
- 1/4 tsp cumin
- 1/4 tsp coriander
- Pinch salt and pepper
Directions
- In a frying pan add oil and spices - fry a few seconds until well mixed. Add chicken cubes and fry until done turning and coating all with spice mixture. Remove from heat and place in a bowl.

- 2 T plain yogurt
- 2 T light mayo
- Can be served on a cracker, cucumber, or radish slice. Also used for a curried chicken wrap on whole wheat tortilla with a leaf of lettuce, diced tomato and a little green onion.
