Curried Chicken and Lentil soup
Im a pantry cooker. I cook whatever is left in the pantry, and hope for the best. Ingredients
- 2 lbs chicken pieces(boiled, skinned and boned,chopped into pieces)
- chicken stock from boiled chicken
- 1/2 cup lentils
- 1 tbsp minced garlic
- 1/2 to 1 cup frozen veggies
- 1/2 cup curry powder
- 2 tsp olive oil
- Chicken flavoring to taste
- salt to taste
Directions
- Boil chicken pieces til cooked, deskin and debone chicken
- add lentils to broth while you are preparing chicken
- add all ingredients except curry powder to broth
- add chicken back in
- use a small frying pan or sauce pan and heat up your oil
- add curry to fry pan and toast til aromatic
- add some soup broth to fry pan and stir well
- add curry mixture back to soup
- cook til reduced and lentils are soft
- I made chapati's and couscous with this dish. Ladle soup over couscous in a bowl. You can use rice, pasta or potatoes also.
- Add a dollop of plain yogurt if desired.
