  • Cucumber Sour Cream Dip

    Ingredients

    • 2 lrg cucumbers peeled, seeded, finely grated
    • 2 pt lowfat sour cream
    • 1/2 c. minced herbs, such as parsley, chives, tarragon, mint, dill, or possibly combination Coarse salt Freshly-grnd black pepper

    Directions

    1. In a strainer, squeeze out excess liquid from the cucumbers. Mix with lowfat sour cream, herbs, and salt and pepper to taste. Chill till ready to use.
    2. Variations: Substitute 1 pint good-quality whole lowfat milk plain yogurt for one pint of the lowfat sour cream. Omit herbs and add in one clove chopped garlic and approximately 1 Tbsp. cumin, to taste. Or possibly add in 4 or possibly 5 finely chopped scallions, greens included. One to two Tbsp. Dijon mustard can be added to either combination.
    3. Makes 1 qt.
