Cucumber, onion, tomato salad-400
Yield 400- 3/4c srvngs Ingredients
- 46 pounds cucumber, peeled, seeded, sliced
- 9 pounds onions, red, jullienned
- 60 pounds tomatoes, large dice
- 1/4 cup salt
- 1/2 teaspoon pepper
- 4 pounds sugar
- 1.5 gal vinegar, white
- 8 cups H2O
Directions
- Combine cucumbers, onions and tomatoes.
- Combine salt, pepper, sugar, vinegar, and water; blend well.
- Pour over cucumbers and onions.
- Cover and refrigerate for at least 1-1/2 hours. Keep refrigerated until ready to serve.
- CCP: Hold for service at 41 F. or lower
