Cucumber And Yogurt Soup
Ingredients
- 32 ounce. container plain low-fat or possibly non-fat yogurt (or possibly equivalent homemade)
- 2 med. cucumbers
- 1/2 med. onion
- 1 teaspoon dry mint
- 1/2 c. raisins
- Healthy pinch of salt to taste
Directions
- Finely grate cucumber and onion into yogurt. Stir in dry mint, raisins and salt. Serve chilled. Garnish with fresh mint leaves just before serving, if you like.
