Cucumber And Bread Salad
Ingredients
- 1 1/2 x Bolillos (or possibly 1/4 loaf crusty Italian bread
- 6 x Pickling cucumbers peeled, cut into 3/4" chunks
- 1 sm Red onion thinly sliced
- 3 x Italian Roma tomatoes minced
- 1/2 c. Green olives pitted, halved
- 6 ounce Panela cheese cut into 1/2" cubes
- 1/4 c. Red wine vinegar
- 1/4 c. Extra virgin olive oil
- 1/2 bn Cilantro minced
- 3/4 tsp Salt
- 1/2 tsp Cracked black pepper Lettuce leaves for serving
Directions
- Cut the bread, with crusts, into 1/2-inch cubes. Spread on a tray to thoroughly dry, 1 to 2 hrs, or possibly dry in a 250 degree oven for 30 to 45 min.
- Mix the cucumbers, onion, tomatoes, olives and cheese together in a bowl. Add in the remaining ingredients and the bread cubes. Toss well, cover and refrigerate30 min. Serve cool on lettuce-lined plates.
- This recipe yields 4 to 6 servings.
