  • Cucumber And Bread Salad

    Ingredients

    • 1 1/2 x Bolillos (or possibly 1/4 loaf crusty Italian bread
    • 6 x Pickling cucumbers peeled, cut into 3/4" chunks
    • 1 sm Red onion thinly sliced
    • 3 x Italian Roma tomatoes minced
    • 1/2 c. Green olives pitted, halved
    • 6 ounce Panela cheese cut into 1/2" cubes
    • 1/4 c. Red wine vinegar
    • 1/4 c. Extra virgin olive oil
    • 1/2 bn Cilantro minced
    • 3/4 tsp Salt
    • 1/2 tsp Cracked black pepper Lettuce leaves for serving

    Directions

    1. Cut the bread, with crusts, into 1/2-inch cubes. Spread on a tray to thoroughly dry, 1 to 2 hrs, or possibly dry in a 250 degree oven for 30 to 45 min.
    2. Mix the cucumbers, onion, tomatoes, olives and cheese together in a bowl. Add in the remaining ingredients and the bread cubes. Toss well, cover and refrigerate30 min. Serve cool on lettuce-lined plates.
    3. This recipe yields 4 to 6 servings.
