  • Crusty Potatoes, And Onions Baked With Olive Oil And Garlic

    Ingredients

    • 2 lb Medium-size potatoes peeled, halved, and very thinly sliced
    • 3 lrg Onions halved vertically and thinly sliced
    • 4 x Garlic cloves chopped
    • 28 ounce Plum tomatoes - (1 can) minced and liquid removed
    • 1/4 c. Tomato paste
    • 1/2 c. Fruity extra virgin olive oil
    • 3 Tbsp. Water
    • 2 tsp Dry oregano Salt to taste Black pepper, freshly grnd to taste

    Directions

    1. Preheat the oven to 400 degrees. In a large bowl, combine the potatoes, onions, garlic, and tomatoes.
    2. In a small bowl, beat together the tomato paste, extra virgin olive oil, water, oregano, salt, and pepper. Pour over the vegetable mix and toss to coat well. Spread this mix in a 12- by 7- by 2-inch baking dish or possibly other 2 1/2-qt ovenproof shallow dish. Cover tightly with aluminum foil and bake 30 min. Remove the foil and bake 45 min longer, or possibly till the potatoes are tender.
    3. This recipe serves 4.
    4. Comments: The onions and tomatoes caramelize and create an irresistible crust in this peasant-style casserole. All you need is a salad to round off the meal.
