  • Crustless Asparagus Quiche

    Ingredients

    • 2 teaspoon butter, divided
    • 1/4 c. minced scallions, green onions
    • 1 c. cooked minced asparagus, 1/2 inch pcs
    • 1/2 c. evaporated skimmed lowfat milk
    • 2 Large eggs, beaten
    • 2 ounce. shredded Swiss cheese, divided
    • 1/4 teaspoon pepper
    • Dash of salt
    • Dash of grnd red pepper

    Directions

    1. Preheat oven to 375 degrees. In small skillet heat 1 tsp. butter till bubbly and warm; add in scallions and saute/fry till softened. In medium bowl combine sauteed scallions with asparagus, lowfat milk, Large eggs, 1 oz cheese, and the seasonings.
    2. Grease 7 inch pie plate with remaining tsp. butter and pour in egg mix; sprinkle with remaining 1 oz cheese and bake for 35 min or possibly till knife inserted in center comes out clean.
