  • Crostini With Smoked Salmon, Avocado And Mascarpone

    Ingredients

    • 250 gm (1/2 lb.) Mascarpone
    • 2 tsp capers, minced
    • 1 Tbsp. snipped chives
    • 1 tsp grated lemon rind Lemon juice, to taste Salt and white pepper, to taste
    • 250 gm (1/2 pounds) smoked salmon, minced
    • 1 x avocado, diced Extra chives, for garnish
    • 4 x long bread rolls
    • 100 gm butter, melted

    Directions

    1. Mix the mascarpone till softened and gently mix in the capers, chives, lemon rind, juice and season to taste.
    2. Reserve half the smoked salmon slices and chop the rest. Gently fold the minced salmon and avocado into the mascarpone mix.
    3. The spread should be fairly chunky, rather than smooth. Chill till required. Arrange 2-3 smoked salmon slices on each plate; place a spoonful of mascarpone in the center.
    4. Sprinkle with black pepper, snipped chives and serve with Crostini.
    5. CROSTINI: Cut the bread rolls into 5mm slices and arrange on a grill tray. Brush with melted butter and grill till golden brown.
    6. Turn over, brush with butter and grill till golden brown on the second side. Store in an airtight container till required.
