Crockpot Carne Adovada for Tortilla and Tamale Dishes
Marinated pork is simmered in a red chile sauce and then is used in enchiladas, burritos, tamales, or over rice. Tastes better the next day. Ingredients
- 3 lbs. Boston butt pork, cut in one inch cubes
- marinade:
- 1/2 cup olive oil
- juice of 1 lemon
- 1/2 tbs. Mexican oregano
- 2 tbs. Tex-Mex Diablo Dust or taco seasoning
- 1 tbs. vinegar
- 2 cloves chopped garlic or 1 tsp. garlic powder.
- 1 recipe chile colorado or red chile gravy
Directions
- Prepare marinade and add pork cubes to it in a bowl or plastic bag.
- Refrigerate 4-8 hours.
- Discard marinade.
- Turn on crockpot.
- Prepare red chile sauce of choice, or use 2-3 cups store-bought enchilada sauce.
- Put all ingredients in crock pot and cook until pork is tender.
- To thin sauce, add chicken stock.
- To thicken add cornmeal.
