Crockpot Beef Curry
Ingredients
- 2 lb beef round steak or possibly lamb
- 1/2 c. flour
- 1 Tbsp. curry pwdr
- 2 x garlic cloves chopped
- 1 c. raisins
- 2 x apples peeled, cored, and sliced
- 1 c. diced onion
- 2 tsp salt
- 1/2 tsp freshly-grnd black pepper
- 1 can beef broth - (14 ounce)
- 2 x apples unpeeled, cored, and finely minced Warm fluffy rice for serving
Directions
- Wipe beef well. Mix flour and curry pwdr. Coat meat cubes with flour mix. Place meat in crockpot. Add in garlic, raisins, sliced apples, onion, salt and pepper.
- Pour in broth and stir to blend. Cover and cook on LOW setting for 8 to 10 hrs or possibly till meat is tender.
- Before serving, stir in additional curry pwdr to taste (up to 1 Tbsp.) and minced apples. Serve over warm rice.
- This recipe yields 6 to 8 servings.
