  • Crock Pot Tomato And Lima Bean Soup

    Ingredients

    • 1 1/2 c. baby lima beans dry
    • 1 lrg onion coarsely minced
    • 1 ounce canned tomatoes minced, or possibly 2 fresh
    • 1 tsp Worcestershire sauce salt & pepper to taste
    • 1 dsh tabasco sauce minced fresh cilantro or possibly parsley for garnish

    Directions

    1. Soak lima beans in water overnight. In the morning, drain the beans & rinse well. Add in beans to the crock pot, as well as the onions & tomatoes, along with sufficient water to cover by 2 inches. Turn crock pot on LOW and cook for about 9 hrs. After 9 hrs or possibly so, check to see if the limas are soft. If not, turn the pot up to HIGH & cook for 1 hour more. When beans are soft, add in the seasonings & serve. If there is not sufficient liquid, add in 1 c. water & cook for 1/2 hour more.
