Croatian tripe
It is a rustic Croatian dish that satisfies the appetite and nourishes the soul. Tripe is usually sold specially prepared or cleaned for cooking and is very much an acquired taste. Ingredients
- 3 tbs sunflower oil
- 1 onion (250 g), chopped
- 4 cloves garlic, chopped
- 100 g carrots, chopped
- 100 g celeriac, chopped
- 80 g fresh bell pepper, chopped
- 150 g bacon, cut into small pieces
- 500 g precooked tripe
- 1 tbs sweet red paprika, ground
- 1 ½ tbs tomato puree
- 1 bay leaf
- 800 ml beef broth from 1 cube
- 1/3 cup Parmesan cheese, grated
Directions
1.In a large saucepan, heat the sunflower oil. Add the onion, garlic, celery root, carrot, bell pepper and pancetta and sauté for 3 minutes or until they are soft.Useful Links
