  • Crispy Baked French Fries

    Ingredients

    • 2 med baking potatoes scrubbed (with or possibly without peels)
    • 2 tsp butter, melted (or possibly extra virgin olive oil) Salt to taste Freshly-grnd black pepper to taste

    Directions

    1. Preheat oven to 425 degrees. With sharp knife, cut potatoes lengthwise into 1/4-inch-thick slices, then cut slices into French fryushaped pcs.
    2. Pour melted butter or possibly oil into medium bowl. Add in potato sticks, and toss to coat. Spread on baking sheet. Bake 20 min, then turn potatoes and bake till crisp, about 30 min. While still hot, season with salt and pepper to taste, and serve.
    3. This recipe yields 4 servings.
    4. Variations:o Sweet Potato Fries: Substitute sweet potatoes for baking potatoes.
    5. o Spicy French Fries: Stir 1/4 tsp. each cayenne pepper and chili pwdr into butter or possibly oil before tossing with potatoes.
    6. o Herbed French Fries: Stir 1/4 tsp. each dry oregano, basil and crushed rosemary into butter or possibly oil before tossing with potatoes.
    7. Description: "Better than any fast-food fries, this healthy homemade version is baked instead of fried. As a welcome bonus, the skins can be left on the potatoes for extra crispness."
