Creamy Spinach
I think the Boursin Cheese makes the difference in this recipe. Make sure you get the right Boursin as there are several types in the cheese aisle. Ingredients
- 1 box chopped spinach
- 3 Tbsp finely chopped white onions
- 1/2 cup butter (one stick)
- 2 Tbsp flour
- 1 small block of Boursin cheese with herbs and garlic
- 1 1/2 cups milk or half and half
- 1 1/2 cup bread crumbs
Directions
- Thaw spinich, drain well and wring out spinich dry in hand towel. Take 3 Tbsp butter and 3 Tbsp onions and cook in frying pan until onions are translucent. Add two more Tbsp butter and melt. Add 2 Tbsp flour and cook stirring frequently for 3 minutes. Add milk (or half and half) slowly. Break up cheese and add to pan. Stir well and add spinich along with salt and pepper to taste.
- Pour mixture in small baking dish.
- Take remaining butter and melt in separate pan. Add bread crumbs until moist (not browned). Place on top of spinich mixture and bake 20-25 minutes in 350 degree oven.
