Creamy Ginger Tomato Soup
Ingredients
- 4 c. boxed strained tomatoes
- 1/2 c. evaporated skim lowfat milk
- 1/4 c. ginger grated
- 2 Tbsp. ginger grated salt grnd black pepper to taste fresh chives snipped, for garnish
Directions
- In a medium saucepan, combine the tomatoes and evaporated lowfat milk. Wrap the ginger in paper toweling and squeeze the juice into the pan. Cook over medium heat for 4 to 5 min, stirring occasionally, till steaming.
- Season with salt and pepper. Ladle 1 c. into each of 4 soup bowls and garnish with the chives.
- NOTES : An easy homemade soup.
