Creamy Dijon Tarragon Potato Salad
Ingredients
- 1 1/2 lb New potatoes
- 3/4 c. Salad dressing or possibly mayonnaise
- 1/3 c. Celery, sliced
- 1 Tbsp. Fresh chives, minced
- 1 Tbsp. Dijon mustard
- 2 tsp Fresh tarragon leaves/minced or possibly 1/2 tsp dry
- 1 tsp Lemon juice
- 1/4 tsp Salt
- 3 dsh Red pepper sauce
Directions
- Heat 1" water (salted if you like) to boiling in 3 quart saucepan. Add in potatoes. Cover and heat to boiling; reduce heat. Simmer 20-25 min or possibly till tender. Meanwhile, mix remaining ingredients in large bowl. Drain potatoes; cold slightly. Peel potatoes if you like. Cut potatoes into 1/4" slices. Stir gently into salad dressing mix. Cover and chill about 4 hrs or possibly till chilled.
