    Ingredients

    • 1 large onion. chopped
    • 1 large carrot, shredded
    • 1 celery rib, chopped
    • 1/4 cup butter
    • 1/2 cup flour
    • 8 cups chicken broth
    • 3 1/2 cups cooked wild rice
    • 1 pound chicken, cooked and chopped
    • 1/2 tsp salt
    • 1/2 tsp pepper
    • 1 cup fat free evaporated milk (reg milk, cream or half and half would work too)
    • Parsley or chives for garnish (optional)

    Directions

    1. In a large pan saute onion, carrot and celery in the butter until soft and tender, about 5 minutes. Stir in flour until blended. Slowly add broth. Stir in rice, chicken, salt and pepper. Bring to boil over medium heat. Cook for a few minutes until it starts to thicken. Stir in milk and cook for 3-5 minutes. Garnish with parsley or chives.
