Creamed Spinach - Steakhouse Style

- 2 10-ounce packages of frozen chopped spinach
- 4 Tbsp butter (half stick)
- 3 Tbsp all-purpose flour
- 1 Tbsp garlic, minced
- 1/2 cup white onion, chopped fine
- 1 cup heavy cream
- 1/4 cup Parmesan cheese
- 1/2 tsp salt
- 1/4 tsp ground black pepper, more or less, to taste
- 1/8 tsp freshly grated nutmeg
Directions
- Thaw the spinach and then drain and squeeze all the liquid from the spinach.
- Melt the butter in a sauce pan or skillet over medium heat. Add the onions and saute 2 -3 minutes or until translucent.
- Next add the garlic and cook and additional 2 minutes being careful not to burn the butter and garlic.
- Add the flour to the butter and onions mixture and stir until smooth.
- Add the cream and Parmesan and heat for 2 to 3 minutes allowing the sauce to thicken, stirring constantly.
- Add the spinach, salt, pepper and nutmeg and stir to combine.
- Cook 2 -4 minutes, stirring often. Taste and adjust seasonings, if necessary.
- Serve hot.
