    Creamed Spinach - Steakhouse Style

    This dish is very versatile and it pairs well with turkey, ham or pork loin and but goes especially well with prime rib or steak.

    Ingredients

    • 2 10-ounce packages of frozen chopped spinach
    • 4 Tbsp butter (half stick)
    • 3 Tbsp all-purpose flour
    • 1 Tbsp garlic, minced
    • 1/2 cup white onion, chopped fine
    • 1 cup heavy cream
    • 1/4 cup Parmesan cheese
    • 1/2 tsp salt
    • 1/4 tsp ground black pepper, more or less, to taste
    • 1/8 tsp freshly grated nutmeg

    Directions

    1. Thaw the spinach and then drain and squeeze all the liquid from the spinach.
    2. Melt the butter in a sauce pan or skillet over medium heat. Add the onions and saute 2 -3 minutes or until translucent.
    3. Next add the garlic and cook and additional 2 minutes being careful not to burn the butter and garlic.
    4. Add the flour to the butter and onions mixture and stir until smooth.
    5. Add the cream and Parmesan and heat for 2 to 3 minutes allowing the sauce to thicken, stirring constantly.
    6. Add the spinach, salt, pepper and nutmeg and stir to combine.
    7. Cook 2 -4 minutes, stirring often. Taste and adjust seasonings, if necessary.
    8. Serve hot.
