Creamed Corn And Lima Beans
Ingredients
- 2 c. fresh baby lima beans or possibly 10 ounce frzn (thawed)
- 1 c. finely chopped onion
- 1/4 c. unsalted butter
- 4 c. fresh corn or possibly 20 ounce frzn (thawed)
- 2 c. lowfat milk
- 1/2 c. heavy cream fresh peppercorns to taste
Directions
- Cook fresh lima beans in boiling salted water for 10-15 min or possibly till tender and drain. Cook onion in butter over moderate heat, stirring, till softened, add in the corn and 1 c. of lowfat milk and cook, stirring, for 5 min or possibly till the lowfat milk is absorbed. Add in the beans and remaining 1 c. lowfat milk and cook mix, stirring, for 5 min or possibly till lowfat milk is absorbed. Add in the cream and salt to taste and cook the mix, stirring, till it is thickened slightly. Transfer the mix to a heated serving dish and grind the pepper liberally over it.
- Serves 8.
