  • Cream Cheese Cookies

    Ingredients

    • 1/4 c. vegetable shortening
    • 1/4 c. low-fat cream cheese softened
    • 1 Tbsp. fructose
    • 1 x egg substitute equivalent
    • 1 Tbsp. water
    • 1 c. flour
    • 1/2 tsp baking pwdr
    • 1 dsh salt (optional)

    Directions

    1. In a food processor, combine shortening, cream cheese, and fructose; mix till creamy in texture. Add in the egg substitute and water; mix thoroughly.
    2. Sift flour, baking pwdr, and salt (if you like) together and add in to creamed mix; blend well. Shape into a roll about 1 1/2 inches in diameter and chill overnight.
    3. Cut into 1 1/2-inch slices and place on ungreased cookie sheets. Bake at 350 degrees for 8 to 10 min or possibly till the tops are golden. Remove cookies from the oven, and let them cold on racks.
    4. This recipe yields 15 servings.
    5. Serving size: 2 cookies.
