Cranberry Sauce With Pearl Onions And Golden Raisins
Ingredients
- 1 c. sugar
- 10 ounce pearl onions blanched in boiling water for 3 min, liquid removed, and peeled
- 1/2 c. golden brown raisins a 1-lb. bag of cranberries picked over
Directions
- In a dry large deep heavy skillet cook the sugar over moderately high heat, stirring constantly with a fork, till it is melted completely and a
- deep golden brown caramel. Remove the skillet from the heat, into the side of the skillet carefully pour 1 c. warm water, a little at a time, and cook the mix over moderate heat, stirring, till the caramel is dissolved.
- Add in the onions, the raisins, and the cranberries and simmer the mix, stirring occasionally, for 10 min, or possibly till the cranberries are tender. Remove the skillet from the heat, let the cranberry sauce mix
- cold, and transfer it to a serving dish.
