  • Cranberry-Pomegranate Infused Granola

    A healthy snack, or even breakfast.

    Ingredients

    • 2 cups old-fashioned rolled oats
    • 1/2 cup of sliced almonds
    • 1/2 cup of Sunrise blend w/Quinoa (if you have a Wegmans this store carries it, you can substitute wheat germ if you'd like) It includes wheat bulgur, buckwheat, colusari, heirloom red rice, whole grain quinoa flakes, and flax
    • 1/2 cup orange blossom honey (or regular honey)
    • 1/4 cup light brown sugar
    • 1 ounce unsalted butter
    • 1/2 teaspoon salt
    • 1 cup dried cranberries infused w/pomegranate juice (or any dried fruit is fine)

    Directions

    1. Heat oven to 350
    2. On a baking sheet add nuts, Sunrise blend, and oatmeal. Bake turning twice for 15 minutes. In the meantime in a saucepan heat butter, b. sugar, salt and butter until b. sugar is completely dissolved. Once the oats and nuts come out turn the oven down to 300. Pour the brown sugar mix over the oats/nuts in a large bowl and blend well. Add in the dried cherries mixing together. In a 9 by 9 glass baking dish spray with cooking oil. With a spatual push in the granola mixture spreading evenly. With cold wet hands press down the granola. Bake for 25 minutes or until golden brown. Let cook completely and break up into pieces. Store in an air tight container for 7 days.
