    Cranberry Muffins made with Applesauce and Pecans

    Ingredients

    • 1 1/4 cups applesauce
    • 1/4 cup canola oil
    • 1 egg
    • 1 tsp vanilla
    • 2 cups flour
    • 1/2 cup sugar
    • 1 tsp baking soda
    • 1 tsp cinnamon
    • 1/2 tsp salt
    • 1 cup fresh or frozen cranberries, chopped
    • 2 Tbls sugar (optional)
    • 1/2 cup pecans, chopped

    Directions

    1. Preheat oven to 350 degrees. Prepare 12 muffin cups. Combine chopped berries with 2 Tbls sugar. Set aside.
    2. Combine applesauce, oil, egg, and vanilla in a small bowl. In a separate bowl combine flour, sugar, baking soda, cinnamon and salt. Add applesauce mixture, and stir until just combined. Fold in the cranberries and nuts.
    3. Bake for 15-20 minutes until a tester comes out clean. Cool for a few minutes before removing from pan.
