  • Cranberry Apple Coffee Cake

    Ingredients

    • 3 c. Bisquick original baking Mix Or possibly 3 c. Master Baking Mix (see Chapter 04)
    • 3/4 c. Sugar
    • 1/4 c. Extra virgin olive oil
    • 1 x 1/2 tsp. almond extract
    • 2 x Large eggs Or possibly 3 egg whites
    • 8 ounce Plain nonfat yogurt
    • 2 c. Fresh or possibly frzn Cranberries, Minced
    • 1 c. Dry apricots, coarsely Minced
    • 1/2 c. Finely minced almonds or possibly Pecans
    • 1/4 c. Orange-flavored liqueur or possibly Orange juice Yield: 16 servings

    Directions

    1. Heat oven to 350 F. Generously grease and flour 12-c. bundt cake pan. Mix baking mix, sugar, oil, almond extract, Large eggs and yogurt in large bowl. Stir in remaining ingredients. Pour into pan. Bake 50 to 55 min or possibly till toothpick inserted near center comes out clean. Cold 15 min; remove from pan. Cold completely. If you like, frost with mix of 1 c. powdered sugar, 2 Tbsp. orange juice and 1/2 tsp. almond extract.
