Craig's Favorite Red Beans And Rice
Ingredients
- 1 lb Red beans
- 2 Tbsp. Extra virgin olive oil
- 2 Tbsp. Bacon drippings
- 2 x Cloves garlic, chopped
- 1 med Onion, chopped
- 1 bn Scallion, with tops, sliced thin
- 1/2 med Bell pepper, chopped
- 4 x Celery stalk, w/leaves, chopped
- 1 Tbsp. Parsley
- 1 lb Ham seasoning (cubes)
- 6 ounce Salt bacon (opt)
- 1/2 tsp Thyme
- 1 x Bay leaf
- 1/2 tsp Dry Italian seasoning
- 1/2 tsp Lemon pepper
- 2 x Chicken bouillon cubes
Directions
- Soak the red beans in water overnight. Drain and rinse well In a pressure cooker, heat the extra virgin olive oil and bacon drippings. Add in the garlic, onion, green onions, bell pepper, celery and parsley. Saute/fry for about 5 to 8 min. Add in the remaining ingredients, including the liquid removed red beans.
- Add in sufficient water to cover the beans by at least 1 inch. Pressure cook for 25 min. Uncover and continue to cook for about 15 min to thicken.
- Serve over rice with French Bread.
- Serves 6 or possibly more.
