  • Craig's Favorite Red Beans And Rice

    Ingredients

    • 1 lb Red beans
    • 2 Tbsp. Extra virgin olive oil
    • 2 Tbsp. Bacon drippings
    • 2 x Cloves garlic, chopped
    • 1 med Onion, chopped
    • 1 bn Scallion, with tops, sliced thin
    • 1/2 med Bell pepper, chopped
    • 4 x Celery stalk, w/leaves, chopped
    • 1 Tbsp. Parsley
    • 1 lb Ham seasoning (cubes)
    • 6 ounce Salt bacon (opt)
    • 1/2 tsp Thyme
    • 1 x Bay leaf
    • 1/2 tsp Dry Italian seasoning
    • 1/2 tsp Lemon pepper
    • 2 x Chicken bouillon cubes

    Directions

    1. Soak the red beans in water overnight. Drain and rinse well In a pressure cooker, heat the extra virgin olive oil and bacon drippings. Add in the garlic, onion, green onions, bell pepper, celery and parsley. Saute/fry for about 5 to 8 min. Add in the remaining ingredients, including the liquid removed red beans.
    2. Add in sufficient water to cover the beans by at least 1 inch. Pressure cook for 25 min. Uncover and continue to cook for about 15 min to thicken.
    3. Serve over rice with French Bread.
    4. Serves 6 or possibly more.
